As a “Ms. In the Biz” you’re bound to be a busy bee: between auditions, callbacks, meetings, or just dealing with traffic. So I put together some simple recipes to take with you on the run–wherever that may be. I promise, these recipes take 10 minutes each!

I don’t know if it’s just my head or if it’s a sign from my body, but I’ve been craving peaches and nectarines. Peaches and nectarines are a summer fruit, so I guess my craving is a seasonal one. Oh, and my craving is a hardcore craving, dare I say like a pregnant lady–oh, I didn’t not just go there!

Anyway, so, yes, peaches and nectarines have been featured in my dreams, taste buds, and anything else that manifests a craving. So I went on a search of great recipes that included peaches and/or nectarines. Here are two of the things I made that I loved: a green smoothie and a cobbler!

Peach Coconut Green Smoothie

2 C packed kale, torn them and discard stems

2 large or 4 small ripped peaches, pitted

2 nectarines, pitted

1 C coconut water*

*you can include ½ C of almond milk or replace coconut water with almond milk altogether for more creamy consistency

Optional:

1 tbsp chia/hemp/flax seeds

1 tsp natural sweetener, i.e. raw honey, stevia, xylitol + more to taste

1 tbsp fresh ginger, minced or grated

1. Combine all ingredients in blender–I put greens first so they can blend better

2. Blend until smooth and serve!

If you choose to add sweetener, add it at the end so you can decide if you need it at all

 

Peach Cobbler

3 large peaches or 6 small ones, pitted

1 C medjool dates, soaked for 5-10 minutes… no more!

1 C of nuts, i.e. pecans, cashews, almonds, or walnuts. You can also use ½ C of one kind and ½ C of another

Cinnamon to taste

Optional:

Nectarine drizzle

½ C of medjool dates, soaked

2 nectarines

Cinnamon to taste

1. Place soaked dates, nuts, and cinnamon (to your heart’s desire) in food processor. Pulse until you get a cobbler/

crumble consistency.

2. Slice your peaches to your desired width

3. Place peaches and crumble in bowl and mix. You can add a pinch of Himalayan salt to your cobbler mixture if

you like.

If you want the nectarine drizzle: add nectarines, dates, and cinnamon in blender with a bit of water. Blend until

4. smooth and pour over peach cobbler. If I add the drizzle, then I don’t add the salt 😉
